Slay day in the kitchen

When I was younger (high school) it was a well-known fact in my house, that "Brandi cannot cook". Cooking was my mom's and sisters' thing. I tried my hand at a few things and they all flopped. I gave up and did not think about...until I got married. I told myself "Brandi you have a husband that is counting on you to cook and provide meals, get with it".  

So I did! I learned to cook. I gathered family recipes, called my mom and M-I-L for kitchen advice and cooking help, I even leaned on my sisters for help. I learned to cook and provide for our family of two.  
11 years later I cook almost daily. I can follow a recipe like a boss and most nights there is a home-cooked meal ready when Grizzly gets home. I am not a chef nor do I call myself a "good" cook. I still call on my sisters and mom for cooking advice, but I can hold my own as well.  My absolute favorite part about cooking is an apron. I LOVE aprons!!! I feel they make my food taste so much better. (wishful thinking) I would love to have a closet dedicated to aprons. Maybe one day!
Yesterday, I spent all day in the kitchen.  I cooked a meal for a friend of mine who recently had heart surgery and is not able to move her arm for a few weeks. I also made our dinner in an instant pot!

I made this for Grizzly and my girls on Wednesday as practice.  I wanted to see how it turned out before I made it for my friend.  My girl's loved it!  They said, "Mom, this is so good?"  Yeah for the Win!

I was pleasantly surprised at how much my girls loved this baked corn.  They asked for more right before dinner as their bedtime snack. That is how you know it's a good recipe!!  

Instant Pot Pot Roast

I made Pot roast in the instapot for our dinner and it was sooooo good!  I put the roast in before I picked the girls up from school, and it was done when we got home from gymnastics!  So easy and so yummy!

If I had a kitchen like this, then I would have loved to cook more as well. I am not a professional, but I am confident in my skills. I think that I am absolutely top class, at least in my hometown. I would love to be a professional just like you, but I do not have that luxury. I am rooting for you, though. You are still my inspiration in this hard life, I always look up to you.
