Now that life as taken on a whole new look for most of us, I thought I would share the daily schedule I have put together for my girls and I. The schedule incorporates two time slots for school work or anything that involves learning. Since the girls are going to be out of school for longer than expected, I wanted to add in more education work. That may include fun learning games, screen time for learning or other worksheets I print off.
I have also added some really helpful Educational cheat sheets Youtube channels, Netflix, Home school websites, and other learning websites. All of these were provided by a friend of mine from Instagram, Emily Barnes.

A friend of mine recently had heart surgery for the second time. She is required to hold her arm still and in a sling until things heal up. That is going to take a few weeks! Cooking is hard enough with two hands, let alone just one! I thought a good meal, already cooked was just what she and her husband need.
As a momma like many of you, I am short on time all the time. I wanted to make a good meal but make it fast. Her husband seems like a meat and potatoes guy like Grizzly, so I knew those had to be involved.
I decided on a Chicago seasoned roast, little ranch potatoes, and garlic & rosemary carrots.
These recipes I made up as I went so keep that in mind lol! I did write ingredients down as I cooked so I would not forget anything.
If you do not own an Instant Pot you need too, they are wonderful! ( I own an 8 quart, linked here) I was nervous to use mine at first because I had heard all kinds of horror stories about the lid popping off or people getting burned from the steam. I am pretty sure those happened because the owners did not read the directions or the manual. Y'all, read the instructions and you will be fine!
The roast took 55-60 minutes to cook. Most take all day in a crockpot but not with the instant pot. It was super easy and fast!
The roast is called Chicago seasoned because of the seasoning I rub on it. I buy it at Walmart and use it on chicken as well.

Baked carrots for the win
I feel like you cannot serve a southern meal without carrots, right? These carrots take no time and taste amazing. When I bake them for my family I leave out the rosemary. My girls are not a fan of it, so I use garlic and salt only. The Parmesan cheese at the end really give it the best flavor. Cheese on anything is good!
Little Ranch Potatoes
These little potatoes are a big hit with my girls and Grizzly. They are small and perfectly portioned for a fork. The ranch flavor gives them such a good zest. They bake best in a 9X13 dish covered with foil.
Food was meant to nourish the body, not tear it down! Feed it right! Cooking at home usually means a healthier meal. Try these fast recipes and let me know what you think!

There is nothing that satisfies my appetite after a long run than a big load of carbohydrates!
A couple of years ago, I came across a banana bread recipe from Athlete Food. It looked super easy and yummy. I wanted to make the recipe a bit healthier than it showed, I substituted some of the original ingredients for cleaner options.

Our bodies are made to run like a well oiled machine. Here is how I see it. Running is the oil that keeps the muscle lubricated and ready to work. Strength training builds the muscles to produce more power. Balance/stretch keeps our muscles limber, agile, long and lean! If you can combine all three, you are bound to have one amazing machine!!

When I was younger (high school) it was a well-known fact in my house, that "Brandi cannot cook". Cooking was my mom's and sisters' thing. I tried my hand at a few things and they all flopped. I gave up and did not think about...until I got married. I told myself "Brandi you have a husband that is counting on you to cook and provide meals, get with it".
So I did! I learned to cook. I gathered family recipes, called my mom and M-I-L for kitchen advice and cooking help, I even leaned on my sisters for help. I learned to cook and provide for our family of two.
11 years later I cook almost daily. I can follow a recipe like a boss and most nights there is a home-cooked meal ready when Grizzly gets home. I am not a chef nor do I call myself a "good" cook. I still call on my sisters and mom for cooking advice, but I can hold my own as well. My absolute favorite part about cooking is an apron. I LOVE aprons!!! I feel they make my food taste so much better. (wishful thinking) I would love to have a closet dedicated to aprons. Maybe one day!
Yesterday, I spent all day in the kitchen. I cooked a meal for a friend of mine who recently had heart surgery and is not able to move her arm for a few weeks. I also made our dinner in an instant pot!

I made this for Grizzly and my girls on Wednesday as practice. I wanted to see how it turned out before I made it for my friend. My girl's loved it! They said, "Mom, this is so good?" Yeah for the Win!
I was pleasantly surprised at how much my girls loved this baked corn. They asked for more right before dinner as their bedtime snack. That is how you know it's a good recipe!!

I made Pot roast in the instapot for our dinner and it was sooooo good! I put the roast in before I picked the girls up from school, and it was done when we got home from gymnastics! So easy and so yummy!

Plan of Attack notepad Grizzly makes a To Do list every single morning. It is routine and it bothers him if he does not write things down. This note pad would be super fast to grab on the go!
Carhartt Beanie long before these became the style for anyone to wear, these were staple pieces for all farmers and outdoor men. My brothers had them growing up and Grizzly had one as well. He recently lost his, so this will definitely be in his Valentine bag.
The Official Beard Bib If your man's facial hair grows as fast as Grizzly's, then he may need this. There is a constant film of beard trimmings around Grizzly's sink. This may be the key to keeping that area cleaner a little bit longer!
The long sleeve work shirt It is hard to beat a quality long sleeve work shirt with a pocket. I do plenty of them in the laundry! Pockets are a deal breaker for Grizzly. He wants a good shirt with a pocket!
Leather iphone case with Keyboard how handy would this thing be! If your guy is on the go and uses his phone for almost everything, including a laptop, this would be a great gift.
Bluetooth Wireless Keyboard for iphone. I put this on the list because I personally have one and use it all the time! I carry it in my purse and use it to answer emails, messages and all the other things on my phone.
Peet Boot dryer has been one of the best things we have bought. Both Grizzly and I use it. He uses it to dry the inside of his boots from sweat or water. I use it to dry my running shoes! It has been worth every penny!
The Bucket Tool Organizer is such a smart invention! 5 gallon buckets have been used for years for all kinds of things. I have seen my dad and Grizzly carry a bucket full of tools and then dig through it to find what they needed. This organizer is perfect for keeping all those small tools in one place.

If you have been on here at all you know I like short, sweet and to the point. That goes for my recipes as well. I like easy ingredients and easy to make. This chicken salad is just that! It takes no time to mix up and enjoy.
I am also a guesstimator. I make a lot of recipes just by guessing on the amounts. I have given amounts on these ingredients but just know you may have to add more or less of something!
This salad can be stored in an air tight container and refrigerated for a few days. It tends to be even better the day after you make it. The flavors have time to soak in!
So so easy to make! I can barely get them made and in the fridge before my girls get their hands on them. These are perfect for a fast breakfast before a run, or for a fast re-fuel post run! I just love these little guys!

A few notes:
Truvani Protrein Powder: This is my favorite protein powder! It is clean, healthy and you know what exactly is in it. I would think any chocolate protein powder would work in this recipe!
Stevia baking chips: I found these Stevia chocolate chips on accident one day, while shopping at Wal-mart. I bought them and use them quite a bit for substituting on recipes.
Food Processor: If there is one item, besides my instapot, that I use a lot in my kitchen, it is this food processor. I use it to make salsa, chop veggies from time to time,make energy balls, and a whole host of other things.
They are fast!

Adults loves them!
Energy balls are one of the best grab and go snacks. I make them all the time and they never last more than two days. I use them for pre-run breakfast, post-run fuel and mid-afternoon snack. They are made with all natural ingredients, no preservatives and sugar only from honey!

A few notes on the ingredients:
Ground Flaxseed: This can be found, usually in the same aisle with flour and baking times. Flaxseed is a wonderful and easy way to add fiber to your diet.
Smuckers All Natural Peanut butter; I have used this for years. I has no sugar just peanuts and salt.
Truvani Protien Powder: Truvani Powder is one that I have used for over a year. It is all natural and there are only five to six ingredients listed in it. You know exactly what you are eating and the flavor is wonderful. But, you can use any protein powder of your choosing for this recipe.
